Autumn Greetings
Hello and happy autumn! Hope the change of season finds you well. I took a couple months off posting new recipes over the summer, but was testing up a storm. Many new plant-based recipes are coming soon (like Vegan + GF Waffles, Mini “Meatloaf”, and some autumn-inspired goodness). In the meantime, here’s what’s new at The Garden Grazer this week:
New Recipe: Portobello Mushroom & Potato Stew with Lentils
This warm & cozy stew is simple to make, yet richly flavorful. Plus it’s quite satisfying with the hearty potato-mushroom-lentil combination. (If you’re not a fan of mushrooms, simply increase the lentils. OR you can choose to leave out the lentils for a mushroom medley of portobello, shiitake, cremini, etc.) It’s a delightful recipe to play around with.
Recipe Refresh: Coconut Curry Vegetable Soup
I recently took new photos of this 2017 recipe. The broth is so silky and flavorful, and it’s one of the easiest recipes on the website. (Just chop a few vegetables, throw everything in a pot, and simmer to golden perfection!)
Recipe Refresh: Kale Greek Salad with Marinated Chickpeas
Even though the season has turned, I still love a fresh, flavorful salad. Hearty kale is a great choice for salads in the fall & winter when it’s at peak season. This one has lots of tangy, zingy flavor thanks to the marinated chickpeas. Plus it holds up well and is great for make-ahead lunches. (Just add olives or vegan feta if you wish!)
