Reader Highlight
I also wanted to share a very sweet + inspirational comment I received this past week from a reader named Lori:
“Hi Kaitlin!
I am so excited to discover your website. I have been inspired by the documentary "What the Health" and also, "Forks over Knives". I had the "widow maker" heart attack two years ago and have been trying to get my cholesterol under control and I have always been hesitant to eat animals. I have been eating WFPB for two weeks and I am already feeling great. My husband has joined in and I am so excited to see all of the benefits of this new lifestyle. I love all of your recipes, they are simple and easy to make. Thank you so much for sharing your talents!! My heart thanks you too 🙂
Take Care,
Lori”
Thank you for sharing, Lori.
Her story also brings to mind New York Times best-selling author Tom Ryan who shares a similar plant-based journey after narrowly surviving a heart attack, stroke, and kidney failure. On his Substack page (and Instagram page) Tom mostly writes about nature and adventures with his two dogs, Samwise and Emily. But he also sprinkles in how he reclaimed his health with a whole foods, plant-based diet inspired by the Esselstyn family.
