This rustic vegan “beef” stew features chunky potato, carrots, Portobello mushrooms, and lentils in a richly-flavored umami broth that's reminiscent of classic beef stew. It's comforting, deeply satisfying, and so nourishing.
Vegan Potato Leek Soup
This ultra-cozy homestyle soup features an abundance of leeks and gold potato. Then it’s accented with fresh herbs and a cashew-miso cream sauce. (Yes!) The luxurious texture is so thick, rich, and creamy… without any butter, heavy cream, or dairy.
Smoky Tomato Lentil Soup
Fire-roasted tomatoes and smoked paprika add a double-dose of smokiness to this warm & tasty soup. I love this recipe because it combines minimal ingredients that maximize on flavor!
Southwest Pasta Salad
This zesty salad combines black beans, tomato, sweet corn, onion, and fresh herbs... tossed in a delicious (no-mayo!) creamy chipotle dressing. It's fresh, smoky, and easy to prepare.
Tomato Orzo Soup with Spinach
Simplicity at its finest! This humble soup is made with just 8 (budget-friendly) ingredients that are mostly pantry staples. But the flavor is so fresh and vibrant! Great topped with fresh basil and vegan parmesan.
