Southwest Corn Chowder
I thought it’d be fun to give my favorite Vegan Corn & Potato Chowder a southwestern-style twist. This zesty remix features fire-roasted peppers, green chiles, jalapeño, and warm spices. It’s smoky, cheesy, and so delicious!
Broccoli Cashew Stir-Fry
This simple yet satisfying oil-free stir-fry has been a reader favorite for years. It’s my plant-based version of a “chicken broccoli stir-fry”… but we swap out the chicken for tender cashew nuts instead! Great served with rice or quinoa.
Vegan Taco Salad
Have you tried this salad yet? I had so much fun creating this recipe a few years ago, and still love it. It comes together with a beautiful, delicious mixture of crisp lettuce, black beans, veggies, chickpea-walnut taco crumbles, and a creamy southwestern dressing. (Yum!)
Spring Minestrone
Re-sharing this delightful seasonal soup that features white beans, fresh dill, miso broth, and yummy spring produce. Asparagus and peas and leeks, oh my! (My daughter’s been on a Wizard of Oz kick lately - one of my childhood favorites.)
Vegan Gluten-Free Waffles
I’m not a “typical” breakfast person (most often I start my days with a bowl of homemade ramen noodle soup), but these waffles remain a go-to favorite for weekends and brunches. Crispy on the outside, and soft & fluffy on the inside. (Great as pancake batter too!)
Fiesta Bean Salad
This hearty salad combines both black beans and chickpeas! They’re tossed with fresh veggies, creamy avocado, and a cumin-lime dressing. I love the versatility - enjoy it as a main dish, side dish, pull-out-of-the-fridge snack, dip with chips, meal prep, take-along lunch, etc.

Behind the Scenes
Sharing a summertime throwback, just because. :) But not to get ahead of ourselves. Is spring springing where you are? We’ve been watching March Madness (I’m a Michigan State alumna and former “Izzone” student section member). And we even had our first robin sighting last week. It was a mild winter here in Montana, but I’m still looking forward to sweet summer sunshine, lush wildflower fields, and getting lost in slow adventures.
Why not - one more throwback. Under the Teton Range swimming in the refreshing, clean aroma of sagebrush. :) Until next time… take good care.
